Avocado Bowls

Ingredients:


1 Avocado

1 Can Chickpeas

1/2 Purple Onion

1 cup Cherry Tomatoes

1 Cucumber

1 Bunch of Cilantro

1 Lemon, Juiced

3 gloves of minced garlic

Pinch of Salt

Drizzle of oil


Directions:


Scoop out avocado into small bowl (Save the avocado skins). Add the lemon, garlic and salt to the avocado and mix. In a separate bowl add the remaining ingredients and mix. Place the mixed avocado back into the skin of the avocado and then place the rest of the ingredients on top! Enjoy!
