Bean Green Salad!


  • Finely grated zest of 1 medium lemon

  • Juice of 1 medium lemon

  • 1 medium shallot, diced (about 1/4 cup)

  • 1 clove garlic, grated or minced

  • 1/2 teaspoon kosher salt, plus more as needed

  • 2 (15-ounce) cans cannellini beans, drained and rinsed

  • 1/3 cup chopped fresh flat-leaf parsley leaves

  • 1/4 cup chopped fresh oregano leaves

  • 1/2 Cup Cherry Tomatoes

  • 1/2 Purple Onion

  • Vegan feta Cheese

  • Three Bunches of Kale (Or any Greens you desire)


  • In a large bowl combine lemon juice, onion, seasons and beans. Mix.

  • Chop the remaining of the ingredients and pour beans over greens. Important fact: Chop greens small which it make it easer for kids to eat it!

  • Enjoy!
