Bean Green Salad!
Finely grated zest of 1 medium lemon
Juice of 1 medium lemon
1 medium shallot, diced (about 1/4 cup)
1 clove garlic, grated or minced
1/2 teaspoon kosher salt, plus more as needed
2 (15-ounce) cans cannellini beans, drained and rinsed
1/3 cup chopped fresh flat-leaf parsley leaves
1/4 cup chopped fresh oregano leaves
1/2 Cup Cherry Tomatoes
1/2 Purple Onion
Vegan feta Cheese
Three Bunches of Kale (Or any Greens you desire)
In a large bowl combine lemon juice, onion, seasons and beans. Mix.
Chop the remaining of the ingredients and pour beans over greens. Important fact: Chop greens small which it make it easer for kids to eat it!
