Scrambled Tofu


Scrambled Tofu 1 pound extra firm tofu (we prefer organic sprouted)

1 tablespoon olive oil

¼ teaspoon turmeric

1 tablespoon chicken-style seasoning

1 medium tomato, diced (optional)

6 mushrooms, sliced (optional) 1

red bell pepper, diced (optional)

¼ cup black or green olives, sliced (optional)

¼ cup green onions, sliced (optional)


Place the tofu between several paper towels and press until the tofu is reasonably dry. Pour the oil into a medium size skillet. Add tofu to the skillet and mix with a fork, breaking up the tofu into small pieces. Add turmeric, until the color resembles scrambled eggs, and chicken seasoning. Add vegetables of choice to the tofu. Cook until the vegetables are at the desired consistency.
